Yeah, it kinda surprised me too. That includes no small number of 24+ episode series too plus a bit of slowdown from several re-watched shows. o.O

My suggestions:
Kill la Kill- gets more insane by the episode. Kind of like TTGL in that regard. Should be done in a few weeks unless it goes beyond 26 episodes
Fate/Zero- maybe to expensive to buy, not sure if CR still streams it
Genshiken Niaime- nothing like ASK-C and Genshiken viewings.
Kamichu- you might have already seen this though
Aria the Animation/Natural/Origination- actually 3 seasons, so may not work for one day, but each show is kind of considered separate. Very relaxing show
Natsume book of Friends- 4 seasons, so it is kind of the same as Aria
Simoun- surely you haven''t seen this show about lesbians flying spiral aircraft drawing geometric diagrams in the sky, have you?

No brainier. Don't even need to Google:

Flying lesbians gets my vote.

Agreed, Simoun is most definitely worthy as a 500th for anyone who hasn't seen it before but I saw that somewhere in the 200s IIRC. It's one of my favorites and has some of the most interesting world mechanics I've seen thus far.

Kill la Kill Good potential with this pick. The gist of this whole exercise is to come up with a show that everyone can come over and marathon so it depends on how big of a show everyone's willing to camp out for.
Fate/Zero If CrunchyRoll still had it and I can rig up a good TV solution then 12 eps would be pretty doable.
Genshiken Niaime This would be excellent on several levels. Is it all out? I presume it's only streamed thus far.
Kamichu I've seen this a very long time ago but a very worthy choice otherwise.
Aria the Animation/Natural/Origination Might be a bit much to cram into a weekend but the first season would probably be pretty doable. For many shows, including this one, I have a peculiar desire to watch them in a certain season. This one strikes me as a late Spring pick so it fits.
Natsume's Book of Friends I do have all of this on hand as well so no worries on streaming flakiness or whatnot. So long as a season counts as a show according to MAL then this could work. This, like MuShiShi, strikes me as a mid-Fall pick but I won't let that interfere should this be a popular choice among those who want to do my 500th with me.

Simoun: come for the girl-kissing, stay for the story.

Since there's relatively little hope of it ever getting licensed then I wouldn't rule it out for that. Maybe a few technicalities to get my PC and TV/stereo setup to play nice but it's not a huge deal. Is it short enough for a bunch of us to watch in one sitting?

Twelve more to go.... Crikey, this might line up with the anniversary party. Dunno if I want it overlapping our 21st anniversary.

I don't see Honey and Clover on your list, that is a great romantic drama as well.
